Huila is arguably Colombia’s best-known department for top microlots. Huila’s geographical accessibility, dense population of knowledgeable farmers, warm and subtropical forests, high elevations, and microclimate diversity have for many years sustained one of specialty coffee’s most beloved regions.
To produce this lot, ripe geisha cherry floated immediately after picking to remove all imperfections and ensure uniform ripeness. After flotation the cherry trees were allowed to macerate and ferment for 24 hours in an open tank, to allow the fruit to oxidize. After this first step, the cherry was de-pulped and then fermented anaerobically in sealed tanks for 72 hours. The resulting anaerobic coffee is a symphony of flavors. Its aroma is a delicate bouquet of jasmine, while the taste is a vibrant dance of tropical fruits and subtle sweetness, making each sip a journey of discovery.
